So what you're effectively saying is they've gone from two studios where they could do everything in to three studios that are soooo good with big screens that are also so good, that when the big events come, they have to resort to hiring in expensive equipment because their own equipment they spent a fortune on is not suitable.? When you've spent as much money as Sky have on replacing studios, you should never end up in a situation where a short while later you're having to make decisions on how long you can afford to hire equipment for a forth, temporary set because your three expensive new studios you recently built are not suitable.
I can understand why NBC may not want to sanction a lot of investment in such screens that are being used for such set piece events. They could ask the perfectly reasonable question as to why a company that has got by fine on two studios for the majority of the last 20 years has gone to three studios and still needs expensive equipment hired. At Sky News HQ they've gone from a single studio that can do everything with multiple presentation areas, to two studios that have replaced it so well that every time the big events happen, they've been sitting there idle for and instead they've had to fork out god knows how much on hiring equipment and commissioning a temporary set.
Of course it costs money and it's a commercial consideration nobody disputes that it costs money and the equipment is not free and neither are the staff wages. Out of interest how long was the studio for the last election in the US up for? Clearly it was a lot more expensive, but I'm aware that it was during a time where Sky News had a lot more staff and a lot less automation so obviously that would be a factor here. The fact we were back to a manual gallery for the elections probably was very expensive since much of Sky's savings came from automation in the last few years.
The good thing however, is even if they are on holiday, Ed and Sophy are not the only people who are capable of standing in front of a big screen in Sky Central and the idea that nobody is available or could have been scheduled for a major event like an election to do that is just laughable as Sky have a number of staff they can call on. Some are even sitting in Osterley on the off-chance they might be needed! The simple fact was nobody was scheduled because there would be no work for a scheduled person to do because the studio was dismantled.

Last time I checked they did have a big screen... in Studio 21... and in Studio 6... and in Millbank?

Also, it's a lot more than just keeping up some set for another two days. It was additional floor crew (who will be needed elsewhere on other shows this weekend), kit hired in from various places, an additional gallery (and additional gallery crew and graphics teams). Maybe Ed and Sophy are not available or have booked time off? Likewise in America, that was a whole separate crew (camera, sound, engineering, director/VM) who were either local crew or flown in specially. It's also a commercial facility which they would be paying to use (rather than using the roof of their own / NBC's bureau) with a significant amount of kit required.
