Didn't they make 3 x best of shows to air alongside this series, presumably in the event of a show being unable to go ahead? They could be used to fill a week. Alternatively I suppose they could cancel the elimination one week but with no elimination they'd need to find 30 minutes of content from somewhere which wouldn't be great.

Even if it wasn’t Matt I’d say bringing back the most recently eliminated celebrity would be a good idea.
Feel for ITV as they've been dogged by issues this series. Might they bring back Matt Richardson? It didn't seem fair that he was knocked out on his first week, I thought he should have been immune from the last vote off actually.

There could be compliance issues (à la Nicki Grahame on BB), if you bring someone back when a public vote has taken place (and some people have spent money)...although it wasn’t a “vote to evict” vote like BB. They could presumably refund people for that week if they wanted to overturn the outcome and restore Matt.

They could probably refund the few people who voted by phone, most people probably vote by the app or not at all

Yes, even though viewers don't actually vote anyone off it would probably be problematic. Giving early boots from recent series a chance to be voted in might be more viable considering they'd have the basics, even if a bit rusty. That said though the latest incarnation has hardly provided any memorable contestants, and we'd end up with the bloody GC!
I think one way to remove an elimination one week is to flip the skate off idea on it's head so it is the top two rather than bottom two who compete, and then the winner of the skate off gets immunity for next weeks show.

Why would they do that?

Why would they do that?
Because there will soon be more celebs that have dropped out than left in the show.
I think they should have cancelled DOI this year due to the covid pandemic like they have done with BGT. There has been nothing but problems this year unfortunately.

I'm pretty sure Covid was nothing to do with the two celebs and one professional who had to withdraw due to injuries.
Rufus withdrew because he likely contracted Covid from someone away from DOI and there's nothing yet to suggest that Joe and his partner contracted it on DOI, other than one person passing it to the other through training given that they've both tested positive. If correct protocol was followed on site in both cases it's unlikely they've passed it on to anyone else involved in the production.
DOI and BGT can't be compared at all. DOI has a set number of contestants whose movements across site can reasonably be controlled/policed, BGT has literally hundreds involved in the auditions and is far more difficult to control.
They've had an incredibly unlucky series but Covid is only partially to blame and they've only had one more Covid related withdrawal than Strictly did.
