Ooh, so they have! I noticed the East edition had ditched the desk for the Friday programme (having still had the desk the night before), but assumed it was a special set-up for a Brexit-based special. Considering how Brexit is still dominating the news and how the BBC EU Ref logo appears in both of the sets, this could be the case, but it is slightly surprising. Last night's main west programme also had cameras deliberately in shot a couple of times - I think this is supposed to resemble how cameras are seen in the main bulletins on BBC One, even down to how the camera in the wide shot at the end of the titles last night tilted up from facing down at the floor when it was in shot, even though that camera wasn't actually used for the following link.

The Cambridge editions tends to go for the coffee table & TV monitor on set approach for special editions, instead of the normal desk. Sometimes they're also used for pre-recorded interviews. A lot of the bulletin related to the fallout from the referendum, and I seem to recall the lighting above and below the barcos(?) was relit in the referendum colours.
Cambridge does seem to like having a camera in shot during the intros. They often appear in-vision on twitter video clips, along with other behind the scenes photos being posted fairly regularly.

I've known them to use a similar setup in the last (as you say) for the World Cup, Royal Wedding etc but they were using a Breakfast sofa and coffee table setup rather than using two chairs as they are currently.

Just watching ITV News Anglia now, they've made the switch to HD.
Apparently Angelia was the last region to go HD this week per an ITV engineer whose account is private.

Are all the main English regions (minus opts) now HD?

Border is still taking Granada HD. I believe that's the only region left.

Border (Same studio as Tyne Tees but no HD feed for that region yet)
Channel Television (HD capable, but no HD feed for that region yet)

Looks like the desk is back for the 10.30pm bulletin in the West...

The desk has returned to the East edition tonight, but they're persevering with the coffee table set-up in the West for the moment.
