I'd have thought the forecasts in Countryfile and similar shows would have been pre-recorded. Was Country Tracks a show introduced when Countryfile moved to primetime?

They've always been live. The programme is delivered in 2 parts, one 50ish minutes and the other 6ish minutes and the weather is done live between the too.
I know the Schaf gets a bit of stick for being unprofessional at times, but being able to continue to present a forecast to time while your graphics are going to pot behind you is still a decent skill. Remember they've got no prompter - I'd imagine the graphics are a useful aide-memoire, but otherwise it's all off the top of their head.
Having worked on the various Spring / Autumn / Winterwatch programmes many times, we had to provide a reverse vision to bring the weather in live to the OB. I suppose it is to allow the forecast to be as up to date as possible. Although the Countryfile type shows are precorded there is no reason why that forecast shouldn't also be on the same basis.

Also, presumably with all the latency that exists these days it might be tricky to get a smooth hand-back from the weather, and back to the live Springwatch presenters without having the weather as an OS into the OB ?
In fact, didn't the live news insert into C4's Steph Show suffer just that problem ?

It certainly appears smoother on air with the weather being bought in to the OB.
The major issue that always took forever to get sorted was the clean feed back from the OB into Nick Miller's earpiece!
I suppose as they contribute to many other programmes while we were trying to line up it was always going to be an issue.
That audio only feed was reasonably low latency, but was generally not used for a two way, but more of a hand over.

C4 presentation did the cut between the Steph Show and C4 news. C4 news sent a Skype feed of the studio output for the Steph Show to put in an in-vision monitor.
