You do know that Gene Wilder and Johnny Depp appeared in two different films made over 30 years apart don't you? One of them is very good (Willy Wonka and the Chocolate Factory) and the other is a little meh (Charlie and the Chocolate Factory). ITV mainly show the good film, so that is alright.
NOTE:- The rest of my post refers only to the good film (1971).
The subtitles are still credited to the BBC at the end of the film when ITV show it. The AD is a little messed up due to the placement of adverts. The AD person will often be interrupted by an advert break. This is not a problem exclusive to this film though, it also happens during the On the Buses trilogy.
I am still impressed that even after 40 years, they still show the scene where the chickens head is cut off. I'm sure one day they will cut that part out. That will be a sad day for television.

Some films do seem to have a high rotation on ITV's channels - Hot Fuzz and Shaun of the Dead being two more that always crop up.
Incidently I really like the Johnny Depp version, in fact I probably prefer it to the 1970's one. It's much more accurate to the book (with the exception of the back-story of his father) and feels much less American. I never liked the added bits of plot in the Gene Wilder version either

Having never read the book, or if I did it was at school and I don't remember anything about it, I judge Willy Wonka and the Chocolate Factory as a standalone film rather than an adaptation of a book. In turn, I can't help looking at the 2005 film as an adaptation of the 1971 film. I'm also not a fan of CGI in general. CGI makes everything possible and makes nothing seem impressive.
I understand that Roald Dahl himself was not a fan of the 1971 film, he was dead by 2005 but I didn't hear any reports of him turning in his grave upon the films release so maybe he preferred the 2005 version too. Neither film had black pygmy Oompa Loompas which is something that Dahl himself changed in later versions of the book anyway.

His daughter did say he would have like the 2005 version.
I believe the 1971, was so bad in Dahls eyes that it took 15 years before anyone one of his books got turned into a film.
