Think they used 3 themes across the run
Correct me if I'm wrong but here's a rough guide
1997-1999, 1st theme tune: https://youtu.be/c4xpEFNU67A?t=1m24s
1999-2002, 2nd theme tune: https://www.youtube.com/watch?v=rpZCYVxPMsU
2002(-2003?), still 2nd theme tune: https://www.youtube.com/watch?v=bDbYEGU7ZX8
2003-2005, 3rd theme tune: https://youtu.be/qAgqwhT7wiU?t=39s
The 2002 titles were pretty short lived as I recall and were the only titles that didn't have a new arrangement of the theme tune.
Also interesting watching the early episodes which had an American-style 'cold open' before the title sequence. Pretty sure this was dropped early on, although in the later years they introduced an Australian-style recap of the last episode.

The 2002-03 shortlived titles is the third theme, with 03-05 being almost identical, with a few different rasps. time period right you are correct though, Although there was a period after the Hart boat crash which used characters swaying into the white background titles in 1999 Call it a V2A https://www.youtube.com/watch?v=T9VEGIlBsow
The cold open happened for years. It wasn't until last year or so the recaps came in.

The cold open fitted in with Channel 5's "doing things differently" thing of the time, as none of the other major soaps had a cold open in 1997 IIRC, though some American imports when aired here (noticeably Fresh Prince of Bel Air when it aired on BBC Two) had its cold open changed into a regular "straight into the titles from the ident" form.
